"Foxy Foxwoods" at James Beard House

An array of top chefs from Foxwoods Resort Casino will be showcasing their skills at the James Beard House in New York later this month. The team will dazzle all comers on Thursday, July 25, at "Foxy Foxwoods" with hors d’oeuvres and a sumptuous dinner featuring sparkling fresh ingredients, many of them from Connecticut farms and producers.

The menu will include Beltane Farm Cheese Croquettes with Roasted Beets, Corn Madeleines with Crème Fraiche and Ratatouille, Sepe Farm Lamb Tartare, Bombster Scallop Crudo and Mishima Ranch Wagyu Rib Eye with Connecticut Summer Harvest among many more.

Doing the honors will be Foxwoods Executive Chef Edward Allen, Banquet Chef Robb Brunelle and Executive Pastry Chef Franck Iglesias, along with top toques Chef Scott Mickelson of Paragon and David Brai at Al Dente.
