Marital Bliss: Steak & Surprises Paired Perfectly With Wine at Fleming's in West Hartford

Last Friday evening, a new menu was previewed for members of the press in an event at Fleming’s Prime Steakhouse & Wine Bar at Blue Back Square in West Hartford. Each course was beautifully presented and married with a carefully selected wines, producing the perfect, sensual union. The result was a mellow and memorable dining experience that excelled in every detail. 

Fleming’s cuisine is haute, not what you might expect to find at a chain restaurant with 65 locations. This is cuisine that pushes the envelope, with flavors combining boldly to surprise and delight—and marrying wine to food flavors is a science that’s central to the experience and perfected here (more on that in a bit).  

Imagine just the right wine complementing, for example, one of these just-introduced Steak Companions dishes: Truffled poached lobster with Béarnaise sauce and caviar; Diablo shrimp baked with a spiced barbeque butter sauce (above); king crab with herb butter simmered with fresh herbs and garlic and topped with caviar, and a Flavor Trio of steak with three spreads— gorgonzola and mascarpone brûlée, sweet onion bacon jam and cabernet mustard.

All steak cuts are expertly seasoned with kosher salt and black pepper, then broiled at 1,600 degrees or iron skillet-crusted and finished with butter and fresh parsley.

Two enhanced prep techniques on select cuts have been introduced: Dry aged (minimum 21 days), producing a richer, bolder flavor with a distinctive nutty note for the Prime New York Strip and the Prime Dry Aged Ribeye, and wet aged, also 21-day minimum process, to provide a juicy, flavorful and savory bite for the main, bone-in Petit and Newport Filet Mignons, prime bone-in ribeye and Prime New York Strip.

To complement each meal, the 2014 edition of the restaurant’s award-winning wine list, the Fleming’s 100®, features 100 carefully-chosen wines by the glass. This list includes 30 remarkable wine values priced at $10 or less.
